Can we all agree that the best part about making cookies is eating the cookie dough? Well, your prayers have been answered. This edible brown butter cookie dough is 100% safe to eat and 110% delicious! This recipe is just my Brown Butter Chocolate Chip Cookie recipe minus a few ingredients.
What do you need to make edible brown butter cookie dough?
Brown butter: The star of the show! If you haven’t made brown butter before, you need to ASAP. Brown butter adds a deep, nutty flavor.
Heat-treated flour: Flour isn’t technically safe to eat straight out of the bag, so we have to heat it before to kill some bacteria.
Brown sugar: Brown sugar is the perfect compliment to brown butter! It adds a rich sweetness to this dough.
Granulated sugar: Sugar helps add a little bit more structure to this dough and an extra touch of sweetness.
Salt: Do not skip the salt!!! Salt is what helps bring out all the beautiful flavors in your dough.
Vanilla extract: Vanilla also helps bring out the flavors in your dough while adding a hint of vanilla.
Milk: Milk helps to bring this dough together. You can use whatever milk you prefer. I use almond.
What is the difference between cookie dough and edible cookie dough?
The short answer is there are no leavening agents (eggs, baking soda, etc.) in edible cookie dough. Edible cookie dough is also made with heat-treated flour. Raw flour can contain bacteria that can cause food-borne illnesses. However, all those bacteria can be killed off with heat. To heat treat flour, set your oven to 350F and bake for 7-10 minutes. Because we are using such a small amount of flour in this recipe, you will only need to heat your flour for about 4-5 minutes.
How to brown butter
Browning butter is super easy! All you need is a pot, a rubber spatula or whisk, butter, and about 10 spare minutes. To brown butter, simply place your butter over medium heat. Stir frequently as your butter is melting. Once it is all melted, leave it alone for a few minutes. It will start to boil rapidly and then foam. Once it starts foaming, stir continuously. This will prevent your butter from burning to the bottom of the pan. You will know your butter is done when it starts to produce a nutty smell and looks like there’s bits of brown at the bottom. Look for the golden color like in the picture above. When in doubt, take it off the heat! Your butter will continue to brown slightly after you have removed it from the heat, so it’s best to pull it off before it gets burnt.
Can I bake edible cookie dough?

Edible Brown Butter Cookie Dough
Equipment
- 1 Small pot
- 1 Whisk or rubber spatula
Ingredients
- 45 grams Butter, browned 3 Tablespoons
- 60 grams All-purpose flour 1/2 cup
- 50 grams Brown sugar 1/4 cup
- 1 Tablespoon Granulated sugar
- 1/4 teaspoon Salt
- 1/2 teaspoon Vanilla extract
- 2 teaspoons Milk of choice
- 2 Tablespoons Semi-sweet chocolate chips Optional
Instructions
- Preheat your oven to 350F.
- Over medium heat, brown your butter. Refer to "how to brown butter" above if you're unsure how to do this.
- Transfer butter to a bowl and place in the freezer for 5-10 minutes to cool to room temperature.
- While the butter is cooling, add your flour to a baking sheet lined with parchment paper. Place the flour into the oven for 4-5 minutes. Be sure to check your flour very minute to make sure it's not burning.
- Once your flour is out of the oven, pour it into a medium mixing bowl. To the same bowl, add brown sugar, granulated sugar, and salt. Mix until combined.
- Once your butter has cooled, add it to the mixing bowl along with your milk and vanilla. Mix until the dough has come together. If it still feels dry, you can add more milk 1/2 teaspoon at a time.
- Use a rubber spatula to fold in chocolate chips if using them. Enjoy!
