The only thing better than iced coffee is boozy iced coffee. This iced Irish coffee recipe has plenty of booze, strong coffee, and creamy cold foam. You will obsess over this stuff, guaranteed!! If you’re a fan of Starbucks’ Irish cream cold brew then this is the recipe for you.

What makes this Iced Irish Coffee so incredible?

Strong coffee: We’re talking suuuper strong coffee here. The Bailey’s cold foam, while delicious, can overpower the coffee if it’s too light. Even if you’re not a strong black coffee drinker, trust me on this one.

Brown sugar: This is the Irish coffee ingredient most people forget! Brown sugar adds the perfect sweetness to coffee and helps lighten up the taste of the whiskey.

Whiskey: Make sure to use a high quality whiskey in this recipe as you can definitely taste it. Feel free to add more or less whiskey depending on your preference. Though I will warn you I tried this with a full shot of whiskey and it was way too much for my taste.

Bailey’s Irish cream: This is not a workday morning kind of drink. We’re adding whiskey AND Bailey’s and it’s incredible. Strong? Sure. Delicious? Absolutely. Bailey’s gives this iced coffee a boozy, creamy finish.

How to make Iced Irish Coffee

  1. Brew your coffee extra strong and hot! You’ll want to use hot coffee so that you can stir in the brown sugar and let it dissolve. If you try to mix brown sugar into cold coffee it won’t dissolve and you’ll end up with chunks of brown sugar throughout your coffee. To brew your coffee extra strong, simply add more coffee grounds than you typically would in your coffee. I would recommend about 1.5x the amount of coffee you typically use.
  2. Make the cold foam. For this, you will want to use a frother if you have one. If you don’t have a frother, you can whisk this mixture really well for 2 minutes or so. Just keep in mind it will not be as thick as it would with a frother. Let the foam chill for at least an hour.
  3. Assemble. Add your booze and top with your cold foam! Easy!

Iced Irish Coffee with Chocolate Bailey’s Cold Foam

A twist on a classic iced Irish coffee. This recipe starts with strong coffee sweetened with a touch of brown sugar, Jameson whiskey, and is topped with a creamy chocolate Bailey's cold foam.

Ingredients

  • 8 oz Strong coffee brewed hot Sub cold brew
  • 2 teaspoons Brown sugar
  • 2 cups Ice cubes
  • 1 oz Whiskey 1 shot

Chocolate Bailey's Cold Foam

  • 2 oz Bailey's Irish Cream, cold 2 shots
  • 1 oz Heavy cream, cold 1 shot
  • 2 teaspoons Cocoa powder

Instructions

  • Measure out 8 oz of hot coffee.
  • While the coffee is still hot, add the brown sugar and stir well until the sugar has dissolved.
  • Pour your coffee over the ice and stir quickly to limit the amount of ice melting. Alternatively, you can let your coffee cool in the fridge.

For the Chocolate Bailey's Cold Foam

  • Combine all ingredients together and use a frother or a whisk to mix thoroughly. Whipping these ingredients for at least 1 minute or so will give the best results.
  • Chill the cold foam in the fridge for 1 hour up to overnight to thicken.

To Assemble

  • To each glass, add 1 cup of ice, 1/2 shot of whiskey, and 4 oz of coffee. Mix well.
  • Pour 1/2 your cold foam mixture on top of each glass. Enjoy!
