What’s in a lavender bees knees?
Lavender: In this recipe, we use culinary grade lavender and infuse it into the gin. It provides the perfect floral compliment to any gin.
Gin: You can use any gin you prefer for this drink! I love using Rainier gin. I highly recommend this to anyone in the PNW area!
Lemon Juice: It is important to use freshly squeezed lemon juice in this recipe.
Honey syrup: This gives the drink the perfect sweetness and adds just a touch of honey in the overall flavor.
How to make lavender-infused gin
This process is actually very easy, but does require a bit of patience. To make lavender-infused gin, simply measure out the 4oz of gin needed for the recipe and add it to a jar along with 1/2 teaspoon of culinary lavender. Let this sit in the fridge for 5-12 hours. Your gin should be a soft purple and smell like lavender once you have let it sit long enough. The longer you let the lavender sit, the stronger the flavor. Just be sure not to exceed the 12 hours otherwise the lavender can cause a bitter taste.
How to make honey simple syrup
Honey simple syrup is even easier to make than traditional simple syrup. For this honey syrup, add equal parts honey and warm water to a bowl or jar and mix until it combines into one unified liquid. This syrup will last you forever so don’t throw away any leftovers! You can use leftover honey syrup in your coffee or tea.
Can I make this ahead of time?
Absolutely! You can make the gin ahead of time if you need. Just be sure to strain out the lavender after 5-12 hours to avoid any bitterness. The honey syrup will keep indefinitely, so feel free to make extras and use it for your coffee or tea in the morning!

- 1 Cocktail shaker
Ingredients
Lavender Infused Gin
- 1/2 teaspoon Culinary lavender
- 4 oz Gin any brand (4 shots)
Honey Simple Syrup
- 2 Tablespoons Honey
- 2 Tablespoons Warm water Like bath water temperature
Lavender Bees Knees
- 4 oz Lavender infused gin 4 shots
- 1 oz Honey simple syrup 1 shot
- 1.5 oz Freshly squeezed lemon juice 1 ½ shots (1-2 Large lemons)
Instructions
Lavender infused gin
- Place the gin and lavender into a mason jar or other airtight container.
- Let it sit in the fridge for at least 5 hours, but no longer than 12 hours.
Honey simple syrup
- In a bowl or jar, add warm (but not too hot) water to your honey.
- Mix until it becomes one unified mixture.
- Store in an airtight container at room temperature.

- In a cocktail shaker, combine honey simple syrup, lavender infused gin, lemon juice, and a handful of ice.
- Shake 10-20 times until ingredients are well-combined.
- Pour evenly into two chilled glasses.
